oatmeal raisin cookies {gfcf}

hellooooo fellow cookie lovers!.. i hope.

so this here is some yummy oatmeal cookies. i use GF soaked oatmeal as a once in a while grain ~ same as basmati rice. so if you're strict paleo or cannot do soaked oats, then this cookie ain't for you!

soaking grains such as oats and rice are a great way for me to add energy rich starchy foods into our diets when we have an active day. You can check out here on soaking, mainly though,

"Grains require careful preparation because they contain a number of antinutrients that can cause serious health problems. Phytic acid, for example, is an organic acid in which phosphorus is bound. It is mostly found in the bran or outer hull of seeds. Untreated phytic acid can combine with calcium, magnesium, copper, iron and especially zinc in the intestinal tract and block their absorption. This is why a diet high in improperly prepared whole grains may lead to serious mineral deficiencies and bone loss. The modern misguided practice of consuming large amounts of unprocessed bran often improves colon transit time at first but may lead to irritable bowel syndrome and, in the long term, many other adverse effects. Other antinutrients in whole grains include enzyme inhibitors which can inhibit digestion and put stress on the pancreas; irritating tannins; complex sugars which the body cannot break down; and gluten and related hard-to-digest proteins which may cause allergies, digestive disorders and even mental illness."

dry ingredients
1 cup almond flour
4 tbspn of coconut flour
1 cup of shredded unsweetened coconut
1 cup of organic raisins (make sure no added sugar or yuckies!)
2 tspn baking soda
1 tbspn cinnamon
1 1/2 tspn nutmeg
2 tbspn chia seed

wet ingredients
1 cup palm shortening
2 eggs
1/4 cup of raw honey
1/4 cup coconut palm sugar
1 cup of soaked gluten free oats (overnight)
1 tbpsn of vanilla

oven at 350, cook for about 10 minutes, depending on your oven... and DEVOURRRRR :)
