|paleo. GAPs and SCD friendly|
5 carrots, roughly chopped
4 cups of broth (I use frozen homemade bone broth - chicken is mild for this recipe - actually two mason jars worth)
3-4 inches fresh ginger ( a good way to make sure you always have fresh ginger is to peel it and keep frozen and use it whenever you want a hint of ginger)
1 medium size onion, roughly chopped
3,4 garlic cloves, smashed
1 star anise
sprinkling of cardamom
1/2 cup of coconut milk (i use this)
sea salt and cracked pepper to taste
bring everything above (except coconut milk) to a boil, then on simmer until carrots are soft.
take out the cardamoms and star anise.
use an immersion blender ( i am obsessed with one i got at costco for less than twenty bucks!) and of course, i have no idea how i've survived all this time. if you do not have an immersion blender, you can pour all of this into a regular blender/vitamix and puree. i then slowly drizzle about 1/2 cup of coconut milk. while i'm blending.
your kids will love this, you will love the carrot and ginger combination. the broth will soothe and heal your tummy, and you'll just feel good all around. if you are on GAPs, then this will spunk up your daily broth fix. we ate this with some grain free bread. so far, the quickest and yummiest paleo bread we've tried.
this soup is good to make in big batches for freezing. for whenever you need that cup of broth, warming ginger and carrot.
